Portobello mushrooms are mature, white button mushrooms and a type of fungus. They are very low in calories and a great substitute for meat in recipes

  • Preparation:
    • Remove the stem (it can be chopped and used in stuffing or discarded)
    • Wipe the cap clean with a damp paper towel
    • Optional: scrape out the gills with a spoon if desired (this can prevent dishes from turning dark)

  • Cooking methods:
    • Grilling: Brush with oil and grill 4-5 minutes per side
    • Roasting: Brush with oil and roast at 400°F (200°C) for 20-25 minutes
    • Sautéing: Slice and sauté in oil or butter for 5-7 minutes
    • Stuffing: Fill the cap with various ingredients and bake
    • Pan-searing: Cook in a hot skillet for 3-4 minutes per side

  • Flavor pairings:
    • Herbs: thyme, rosemary, parsley, basil
    • Seasonings: garlic, balsamic vinegar, soy sauce, Worcestershire sauce
    • Other ingredients: cheese, nuts, breadcrumbs, olive oil

  • Culinary uses:
    • As a meat substitute in burgers
    • Stuffed with various fillings (cheese, vegetables, grains)
    • Sliced in sandwiches or on pizza
    • Chopped in pasta dishes or risottos
    • As a side dish
    • In salads (grilled or roasted)
    • As a base for vegetarian main courses

  • Tips:
    • Portobellos have a meaty texture and rich, earthy flavor
    • They release a lot of moisture when cooked, so avoid overcrowding the pan
    • Marinating before cooking can enhance flavor
    • Can be used as a low-carb substitute for burger buns or pizza crusts
